Wild bilberry muffins


Wild bilberry muffins
10 0z plain Flour
3 tsps baking powder
1/2 tsp salt
4-5 oz sugar

240ml milk and/or water
1 egg
90 ml oil

5 oz bilberries

mix dry ingredients
mix wet ingredients
mix together quickly- a few strokes
fold in berries

put mixture in 12 muffin tin, in paper muffin cases
bake for 25 min at 175C (fan oven) or 190C (conventional)

a note about muffins:
These are American muffins and different to fairy cakes or english muffins.
They don't keep long but freeze well, apparently.
They are quick and easy to make and yummy.

SNAP!! I made some cracking blueberry muffins the other day and then realised that the legendary Quantock whortleberries would be wonderful in them and I'm planning on making a batch for a pregnant friend next week. I WILL take a snap and share the recipe.

I keep forgetting about this blog and am having a very unbloggy patch. The banana birthday cake looks like the yummiest cake in the world and I intend on having that for my birthday (I always make my own :-( )

These look scrummy. When we lived in Tod I remember walking up the road and finding so many bilberrie bushes. Hmm, that I do miss!
