Wild bilberry muffins
Wild bilberry muffins
10 0z plain Flour
3 tsps baking powder
1/2 tsp salt
4-5 oz sugar
240ml milk and/or water
1 egg
90 ml oil
5 oz bilberries
mix dry ingredients
mix wet ingredients
mix together quickly- a few strokes
fold in berries
put mixture in 12 muffin tin, in paper muffin cases
bake for 25 min at 175C (fan oven) or 190C (conventional)
a note about muffins:
These are American muffins and different to fairy cakes or english muffins.
They don't keep long but freeze well, apparently.
They are quick and easy to make and yummy.

These look scrummy. When we lived in Tod I remember walking up the road and finding so many bilberrie bushes. Hmm, that I do miss!
