Oatcakes


By popular demand! here is my recipe for oatcakes. It makes quite a few but I dont think it's worth making any less as you can store what you don't eat in a jar.







12 oz/300g fine oatmeal (or do some porrige oats in a blender)
4 oz/100 spelt flour (or wholemeal or any plain flour)
pinch of salt
1 tsp bicarbonate of soda
2 oz/50g butter or margarine
6-8 fl oz/150-250ml hot water

Mix dry ingredients.
Melt butter in pan and add to dry ingredients with enough hot water to make a stiff dough.
Knead on a surface dusted in oatmeal until smooth (doesn't take long this!).
Roll out as thinly as possible (each child can have a small piece to themselves) and cut into desired shapes.
For a trad shape, roll into large cricle and cut into quarters with knife.
Place on ungreased baking sheet, dusted with oatmeal or porrige oats.
Bake in preheated oven at 180C/ gas mark 4 for 15-20 minutes, until the edges just start to turn brown.
