curry


2 tbps veg (sunflower) oil
1 onion
2 cloves garlic
ginger
1 red chilli
korma spice/ cumin/coriander
3 potatoes
2 carrots
1/4 green pepper
cabbage
green/puy? lentils
2 tins tomatoes
1 apple
chunk of marrow/ overgrown cougette, peeled
1 veg stock cube
handful of sultanas
1/2 tin coconut milk (optional, add water if needed)

fry onion in oil, adding spices and potatoes, stirring every few minutes.
Add the rest and simmer for1 hour, adding water if needed.
Meanwhile cook basmati rice and prepare yogurt with grated cucumber and mint
