pumpkin soup

What to do with the inside of all those pumpkins?

pumpkin (a bowl full)
2 onions
potatoes
stock cube/ boullion powder
2-3 cloves garlic
olive oil



First hollow out your pumpkin- ready for carving!
Fry up chopped onions and garlic in oil till soft.
Add cubed potato and scrapings of pumpkin.
Add water and stockcube/ boullion powder with seasoning/herbs to taste.
Simmer until it is edible.

Sometimes I add ginger with the garlic- it goes very well.

toad in the hole

1 or 2 packets of veggie sausages
1/2 pt milk (300ml)
2 eggs
8 oz plain flour (225g)
pinch of salt
oil

Preheat oven to max (225C) and put in a large baking dish with 1-2 tbsp oil, to heat up.
Fry up sausages to brown them.
Beat eggs and milk and add this to a hole in the flour/salt.
Put sausages in hot baking dish- if they sizzle it is hot enough to pour on the batter mixture.
Bake for 15 minutes until risen and golden brown.

Serve with onion gravy and baby roast potatoes.
